The new kid on the block is our spinach cake - like a carrot cake, but with spinach! Light, two layer sponge filled and iced with vanilla mascarpone cream cheese and sprinkled with pomegranate. Lots of spinach, but doesn't taste spinachy in the least.
Base: Free range eggs, rapeseed oil, sugar, flour, spinach, vanilla essence, baking powder. Icing: Mascarpone, cream cheese, icing sugar, vanilla, pomegranate.
